Here is our classic Kerala sambar recipe. Prep Time: 10 minutes. Cook Time: 25 minutes. Serves: 4.
Ingredients: 1 cup Toor Dal, 2-3 teaspoons Nair's Sambar Tatva, 1 onion chopped, 1 tomato chopped, seasonal vegetables (drumstick, brinjal, pumpkin), small ball of tamarind soaked in warm water, half teaspoon mustard seeds, half teaspoon urad dal, curry leaves, pinch of asafoetida, 1 tablespoon coconut oil, salt to taste.
Method: Step 1 - Pressure cook toor dal with turmeric for 3-4 whistles and mash well. Step 2 - Boil vegetables with salt until tender, add tamarind water and simmer 5 minutes. Step 3 - Mix 2-3 teaspoons of Sambar Tatva in quarter cup water to form paste. Add to simmering vegetables and cook 3-4 minutes. Step 4 - Add mashed dal, mix, adjust consistency and simmer 5 minutes. Step 5 - Temper with coconut oil, mustard seeds, urad dal, curry leaves and asafoetida. Pour over sambar. Garnish with coriander and serve hot.
