Recipe 1: Puttu & Kadala Curry (Authentic Kerala puttu and kadala curry recipe)

Ingredients:

  • 2 cups rice flour (Puttu flour)

  • 1 cup grated fresh coconut

  • Salt to taste

  • Water as needed

Instructions:

  1. In a bowl, mix rice flour and salt.

  2. Sprinkle water gradually and mix until the flour becomes crumbly and moist but not sticky.

  3. Layer grated coconut and the moistened flour alternately in a Puttu maker.

  4. Steam the layers for 5-7 minutes or until cooked.

  5. Serve hot with Kadala Curry.

Kadala Curry (Black Chickpea Curry)

Ingredients:

  • 1 cup black chickpeas (kala chana), soaked overnight

  • 2 tbsp coconut oil

  • 1 tsp mustard seeds

  • 1 large onion, finely chopped

  • 2 green chilies, slit

  • 1 tsp ginger-garlic paste

  • 1 tsp black peppercorns

  • 1 tsp coriander powder

  • 1 tsp turmeric powder

  • 1 tsp red chili powder

  • 1 cup grated coconut

  • Salt to taste

  • Curry leaves

Instructions:

  1. Pressure cook the soaked chickpeas until tender.

  2. Grind grated coconut and black peppercorns into a coarse paste with some water.

  3. Heat coconut oil in a pan, add mustard seeds and curry leaves.

  4. Sauté onions and green chilies until translucent, add ginger-garlic paste.

  5. Add turmeric, chili, coriander powders, and the coconut-pepper paste; cook until oil separates.

  6. Add cooked chickpeas and salt, simmer for 10 minutes for rich flavor.

  7. Serve alongside hot Puttu.

Recipe 2: Classic Kerala Avial

Ingredients:

  • 2 cups mixed vegetables (carrot, beans, drumstick, raw banana, yam)

  • 1 cup grated coconut

  • 2 green chilies

  • 1 tsp cumin seeds

  • 1 cup yogurt or tamarind water

  • Curry leaves

  • Coconut oil

  • Salt to taste

Instructions:

  1. Cut all vegetables evenly and boil until tender but not mushy.

  2. Grind coconut, chilies, and cumin seeds to a coarse paste.

  3. Mix the paste with yogurt or tamarind water and salt.

  4. Add this blend to cooked vegetables and cook gently.

  5. Drizzle with coconut oil and garnish with curry leaves.

  6. Serve with rice.


Recipe 3: Coriander Chicken

Ingredients:

  • 500 grams of chicken, cut into pieces

  • 1 onion, finely chopped

  • 2 tomatoes, chopped

  • 2 tablespoons of coriander powder

  • 1 teaspoon of cumin

  • 2 cloves of garlic, minced

  • 1 tablespoon of ginger, grated

  • Salt to taste

  • 2 tablespoons of oil

  • Fresh coriander for garnish

Instructions:

  1. Heat oil in a pan over medium heat.

  4. Add the chicken pieces and cook until browned.
