Recipe 1: Puttu & Kadala Curry (Authentic Kerala puttu and kadala curry recipe)
Ingredients:
2 cups rice flour (Puttu flour)
1 cup grated fresh coconut
Salt to taste
Water as needed
Instructions:
In a bowl, mix rice flour and salt.
Sprinkle water gradually and mix until the flour becomes crumbly and moist but not sticky.
Layer grated coconut and the moistened flour alternately in a Puttu maker.
Steam the layers for 5-7 minutes or until cooked.
Serve hot with Kadala Curry.
Kadala Curry (Black Chickpea Curry)
Ingredients:
1 cup black chickpeas (kala chana), soaked overnight
2 tbsp coconut oil
1 tsp mustard seeds
1 large onion, finely chopped
2 green chilies, slit
1 tsp ginger-garlic paste
1 tsp black peppercorns
1 tsp coriander powder
1 tsp turmeric powder
1 tsp red chili powder
1 cup grated coconut
Salt to taste

Instructions:
Pressure cook the soaked chickpeas until tender.
Grind grated coconut and black peppercorns into a coarse paste with some water.
Heat coconut oil in a pan, add mustard seeds and curry leaves.
Sauté onions and green chilies until translucent, add ginger-garlic paste.
Add turmeric, chili, coriander powders, and the coconut-pepper paste; cook until oil separates.
Add cooked chickpeas and salt, simmer for 10 minutes for rich flavor.

Ingredients:
2 cups mixed vegetables (carrot, beans, drumstick, raw banana, yam)
